Recipe for Herb Vinaigrette :

Serves: 1 and ¼ cups of vinaigrette


1/3 cup white wine vinegar

1 Tablespoon finely chopped shallot

1 Tablespoon Dijon mustard

¼ cup chopped mixed fresh herbs (leaves only) such as chives, tarragon, dill, mint, or basil

¼ cup chopped parsley leaves

¼ cup chopped cilantro leaves

1 teaspoon salt

½ teaspoon black pepper

1 cup extra-virgin olive oil
Water as needed


  1. In a blender, combine all ingredients except water.
  2. Process until smooth. If the vinaigrette is too thick, add some water.
