Let's Dish Host Chris Koetke shares his recipe for Tomato Onion Garlic Beans

CLEVELAND - Beans make a really inexpensive side dish and when you cook them up with some tomatoes, onions and garlic, they get really flavorful.

Recipe for Tomato Onion Garlic Beans

Difficulty: Easy

Prep time: 20 minutes

Cook time: 20 minutes

Serves: 6-8


4 cans drained and rinsed cannellini beans

3 Tablespoons extra virgin olive oil

1 cup finely diced onion

4 cloves minced garlic

4 tomatoes, seeded and diced

½ teaspoon salt

½ teaspoon ground black pepper

1 teaspoon dried thyme leaves

3 Tablespoons minced parsley leaves


  1. Cook onion in olive oil in a saucepan over medium heat (about 8 minutes).
  2. Add garlic and continue cooking for 1 more minute.
  3. Add tomatoes, salt, pepper, and thyme and continue cooking over medium heat until tomatoes soften (about 10-15 minutes).   They should still be quite juicy when they are done.
  4. Mix the cooked tomatoes, canned beans, and parsley.  Heat until the beans are hot. Taste for seasoning and serve.
