Recipe for Chow Chow
Prep time: 20 minutes
Cook time: 70 minutes
Yield: 8-10 as a small side accompaniment
1 red bell pepper, finely diced
4 large green tomatoes, finely diced
2 stalks of celery, finely diced
¼ of a head of green cabbage, finely diced
1/3 c. cider vinegar
1/3 c. sugar
½ teaspoon salt
½ Tablespoon pickling spice tied into a sachet*
1. Combine all ingredients in a non-reactive metal sauce pan. Mix well and cook the mixture over low heat, uncovered, for about 60 minutes. Stir frequently so that the bottom of the pan does not scorch.
2. Let cool.
*A sachet is a piece of cheesecloth that has been tied into a ball with butcher's twine.
