Grilled Chicken Breasts with Mango Relish

Relish:

1/3 cup white wine vinegar

¼ cup honey

¼ cup water

½ teaspoon salt

2 cups mango, cubed

1 cup English cucumber, diced

1 cup celery, diced

Chicken:

6 boneless, skinless chicken breasts

About ½ cup olive oil

Salt

Pepper

In a 1- to 1 1/2-quart pan, combine vinegar, honey, water and salt. Simmer over medium heat for 5 minutes, then boil over high heat, stirring often, until reduced to 1/2 cup, about 2 minutes longer. Let cool.

In a salad bowl, combine vinegar mixture, mango, cucumber and celery. Cover and chill, stirring occasionally to blend flavors, at least 15 minutes and up to 1 hour.

Preheat grill to medium high heat. Meanwhile, drizzle oil, and then season both sides of the chicken breasts with salt and pepper. When grill is hot, place the chicken on the grill. Cook for about 5 minutes on each side, or until the chicken is cooked through.  Place the chicken on a platter and serve topped with the relish.
