Delicious Ways To Infuse Your Food With Beer

The craft beer movement is here to stay and if you thought drinking the lovely libation was all people were doing with it, think again!   Beer infused foods are hitting tables across the country. The List’s Donna Ruko, with the help of Chef Mat Grunwald of Sanctuary Camelback Mountain Resort drafts new ways to combine a cold one with your cuisine on the Breakdown.

Golden Lager Onion Rings

Serves: 4

Prep time: 5 minutes

Cook time: 5 minutes

  • 3/4 cup all-purpose flour
  • 3/4 cup corn starch
  • 2 teaspoons kosher salt
  • 2 teaspoons freshly cracked black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 1/2 cup Lager beer
  • Flour as needed
  • White onions, peeled and cut into rings vegetable oil to fry 

Preheat the vegetable oil to 350 degrees F.

In a large bowl combine the dry ingredients together and whisk.

Add in the beer to the dry ingredients and mix until the batter is a pancake batter consistency.

Dredge the onion rings through the flour first and then into the wet batter, taking care to shake off excess batter.

Gently drop into the oil and fry for 45 seconds on each side. Remove from the oil and drain on a paper towel. Season with kosher salt.

 

Pale Ale Chorizo Hash Taco Mix

Serves: 4

Prep time: 10 minutes

Cook time: 10-15 minutes

  • 1/2 stick butter, unsalted
  • 1 pound pork chorizo, ground
  • 1 yellow onion, peeled and diced
  • 5 cloves garlic, peeled and sliced
  • 1 poblano pepper, seeded and diced
  • 1 tablespoon dried Mexican oregano,
  • 2 teaspoons ground cumin seed,
  • 1 teaspoon smoked paprika
  • 1 large can black beans, rinsed and drained
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 1/2 cup Amber beer
  • Sour cream to garnish
  • Chopped cilantro to garnish
  • Shredded cheddar cheese to garnish

Heat the butter in a large skillet to medium-high heat. Cook the chorizo and onion in the pan until golden brown.

Add the garlic, poblano pepper, Mexican oregano, cumin, smoked paprika, black beans, salt and pepper to the pan and simmer for seven minutes on low.

Add the beer and cook for an additional two minutes. Garnish with sour cream, chopped cilantro, and cheddar cheese

 

Guinness Milk Shake

Serves: 4

Prep time: 2 minutes

  • 1 pint chocolate ice cream
  • 1/2 cup smooth peanut butter
  • 1/2 cup milk
  • 1/2 cup Guinness
  • 1 cup marshmallows
  • Hershey's chocolate syrup
  • Sea salt to garnish

Blend together the ice cream, peanut butter, milk and Guinness until smooth.

Drizzle the chocolate syrup into the cups that you will be serving the milkshakes in and fill with the blended mixture.

Top with the marshmallows and brûlée with a torch.
