Robin Benzle's Cuban Mojo Sauce

Pronounced 'Moho', this is a garlicky, limey traditional Cuban sauce that can be splashed on nearly everything -- perfect for summer grilling.

  • 1/2 cup olive oil
  • 8 - 9 large cloves garlic, minced
  • 2/3 cup freshly squeezed lime juice (5 - 6 limes)
  • 1/3 cup water
  • 1 heaping teaspoon ground cumin
  • Salt and pepper to taste
  • 1/3 cup chopped fresh cilantro

Heat olive oil in a medium saucepan. Add garlic and saute 30 seconds. Stir in lime juice, water, cumin and salt and pepper. Over medium heat, bring to a boil.

Remove from heat and allow to cool. Mix in cilantro. Spoon over everything from grilled meat, chicken, pork and fish to roasted vegetables and potatoes. You can even use it as a dipping sauce for bread. Stores in refrigerator for up to two weeks.

Note: If you're not a fan of cilantro, substitute freshly chopped oregano.
