Silver Dollar Crab Cakes

Ingredients

  • 1 lb Lump Crab Meat
  • ½ cup Diced Red Pepper
  • ½ cup Diced Green Pepper
  • ½ cup Diced Red Onion
  • ½ cup Mayonnaise
  • ½ oz. Old Bay Seasoning
  • ½ cup Bread Crumbs
  • 2 Egg Yolks
  • Juice of 1 Lemon
  • Salt & Pepper to Taste
  • Additional Bread Crumbs for Breading
  • Olive Oil for Cooking

Gently combine all ingredients. Make patties (about 3 oz. each). Coat in bread crumbs. Sautee in Olive Oil and serve.

1040 EZ Chicken With A White Wine Reduction

Ingredients

  • 1 Boneless Skinless Chicken Breast
  • ¼ cup Julienne Spanish Onion
  • ¼ cup Sliced Mushrooms
  • 2 Strips of Cooked Bacon (Rough Chop)
  • 2 T Roasted Garlic Puree
  • 2 t rubbed Sage
  • ¾ cup White Wine (Chardonnay)
  • 1 T Butter
  • Salt & Pepper to Taste
  • Olive Oil for Cooking

In a large sautee pan over medium-high heat add enough olive oil to coat pan. When oil is hot add Chicken Breast. Cook both sides until golden brown and reaches an internal temp of 165 degrees.

Add Onion, Mushrooms and Bacon. Add White Wine to deglaze pan. Reduce slightly. Add Roasted Garlic, Rubbed Sage & Butter to finish sauce. Salt & Pepper to taste.
