Roasted Corn Maque Choux

Yield: serve six

  • 4 tbsp unsalted butter
  • ½ cup onion fine diced
  • ¼ cup celery fine diced
  • ½ cup green pepper fine diced
  • ½ cup red pepper fine diced
  • 1 tbsp chopped garlic
  • 1 cup tomatoes diced
  • 1 tbsp fresh thyme chopped
  • salt & pepper to taste
  • cayenne pepper to taste

Method:

Melt butter in pot add corn, onions, celery, and both peppers, in pot sauté for about 15 minutes or until vegetables are tender. Add garlic, tomatoes, and fresh thyme sauté for another 15 minutes salt and pepper to taste. add cayenne for spicy heat to taste.
