Rules to safely prepare a Super Bowl buffet

AURORA, Ill. - Don't let bacteria be the uninvited guests of your Super Bowl party.

Buffet-style food can easily spoil and cause foodborne illness. So Kane County Health Department officials have issued some recommendations for anyone who will be cooking or hosting on Sunday.

Health officials say wash your hands with soap and warm water for 20 seconds before and after handling food.

They suggest using one cutting board for raw meat and poultry and another one for veggies or foods that will not be cooked in order to avoid cross contamination. A food thermometer will help ensure that meat and poultry are fully cooked. Health officials say the internal temperature, not meat color, indicates doneness.

Lastly, health officials say do not leave food for more than two hours at room temperature.
