CLEVELAND - Summer time is a wonderful season to take advantage of delicious fruit, and the Live Well Network’s Chris Koetke does just that with his Red Berry Soup.

When summer berries are at their peak freshness, what could be better than a refreshing dessert soup all made in the blender? The tofu adds body to the soup and an extra bit of nutrition.

Recipe for Red Berry Soup

Difficulty: Easy

Prep time: 15 minutes

Cook time: 0 minutes

Serves: 6-8

1 ¼ pounds strawberries

3 ½ pints raspberries

1 ½ cups Italian Moscato wine (half of a 750ml bottle)—or any other sweet wine

2 Tablespoons freshly squeezed lemon juice

¼ cup sugar

6 oz. soft silken tofu

¼ cup honey

Assorted chopped fruit and berries

Fresh mint sprigs to garnish

  1. Place strawberries, raspberries, wine, lemon juice, sugar, tofu, and honey in blender.  Process until smooth. Taste and check for sweetness.  You may need to add more sugar depending on how sweet the fruit is. Chill until cold.
  2. When ready to serve, pour soup into a chilled bowl.  Garnish with additional chopped fruit and berries and fresh mint springs.

This soup is intensely flavored, and healthy.  Perfect for a hot summer day. You can find more recipes like this at our partner Live Well Network’s website www.livewellnetwork.com .
