CLEVELAND - Summer time is a wonderful season to take advantage of delicious fruit, and the Live Well Network’s Chris Koetke does just that with his Red Berry Soup.
When summer berries are at their peak freshness, what could be better than a refreshing dessert soup all made in the blender? The tofu adds body to the soup and an extra bit of nutrition.
Recipe for Red Berry Soup
Difficulty: Easy
Prep time: 15 minutes
Cook time: 0 minutes
Serves: 6-8
1 ¼ pounds strawberries
3 ½ pints raspberries
1 ½ cups Italian Moscato wine (half of a 750ml bottle)—or any other sweet wine
2 Tablespoons freshly squeezed lemon juice
¼ cup sugar
6 oz. soft silken tofu
¼ cup honey
Assorted chopped fruit and berries
Fresh mint sprigs to garnish
