Chris Koetke, host of Let’s Dish, whips up homemade Lemon Curd, a versatile dessert that can be used in a variety of sweet dishes.
This all-purpose recipe is simply irresistible and so much cheaper than the lemon curd purchased at the store.
Recipe for Lemon Curd
Difficulty: Moderate
Prep time: 10 minutes
Cook time: 15 minutes
Serves: 3 cups
4 Eggs
4 Egg yolks
1 cup Sugar
¾ cup lemon juice, freshly squeezed
2 lemon, zested
1 teaspoon vanilla extract
8 ounces (2 sticks) unsalted butter, cut into pieces
1. Combine all ingredients in a heavy saucepan except butter and whisk to combine.
2. Heat over a low flame, stirring constantly; until curd thickens (180° F using an instant read thermometer).
3. Remove from heat and whish in butter.
4. Pour into a bowl. Allow to cool before refrigerating.
