CLEVELAND - Mashed potatoes are a great side dish to any meal, but Live Well Network host of Let’s Dish, Chris Koetke, mixes it up a bit by making mashed butternut squash.
Recipe for Mashed Butternut Squash
Difficulty: Easy
Prep time: 15 minutes (plus 2-3 hours marinating time)
Cook time: 0 minutes
Serves: 4
1 2 3/4- to 3-pound Butternut squash, halved crosswise, seeded
2 tablespoons olive oil
4 tablespoons (1/2 stick) butter
2 garlic cloves, minced
2 1/2 teaspoons chopped fresh thyme
½ cup heavy cream or whole milk (to reduce the calories, half of this liquid can be replaced by chicken or vegetable broth
½ teaspoon salt
¼ teaspoon white pepper
2 tablespoons chopped fresh parsley, divided
