Recipe for Fennel Citrus Salad:

Difficulty: Easy
Prep Time: 20 minutes
Cooking time: 0 minutes
Serves: 4

2 fennel bulbs, washed
1 head Boston lettuce, torn into bite sized pieces
1 cup arugula leaves
8 radishes, thinly sliced
2 Tablespoons green onions, minced
2 teaspoons Dijon mustard
¾ teaspoon salt
2 teaspoons sugar
6 Tablespoons olive oil
Juice of 1 orange
Juice of 1 ½ lemons

1. Combine all the ingredients except the fennel, lettuce, arugula, and radishes to make the orange vinaigrette.
2. Cut each fennel bulb in half (from top to bottom). Remove the core from the bottom center of each fennel half. Cut the fennel across the grain into very thin slices.
3. Combine with orange vinaigrette to nicely coat the fennel, lettuce, arugula, and radishes. Rectify seasoning and serve.
